Grilled Zucchini And Red Peppers (Italian Style)

Add some Italian flair to your grilling with this tasty recipe for grilled zucchini and peppers. Perfect as a side dish or as a main course. It is sure to be a hit at your next cookout.

Italians love doing all their cooking outside in the summer since most people have no air conditioning and it can get hot in Italy. Whether I'm home or in Italy, I try to do the same thing. Grill and cook whatever I can so I don’t heat up my house!

This simple grilled side of zucchini and peppers is one of my favorite zucchini recipes (when I am not making my summer squash pasta as a main) because it's perfect for outdoor cooking and it tastes delicious. It will not heat up your house and it makes the perfect side dish to any meal!

About The Ingredients

Ingredients for grilled zucchini and peppers: zucchini, bell peppers and garlic olive oil marinade.

The ingredients are very simple for this Italian summer side dish. You only need zucchini, red bell peppers, olive oil, lemon juice, and fresh garlic.

The olive oil, lemon, and garlic are what make up the Italian dressing that gets poured over the vegetables after they are done grilling. This is the delicious Italian flavor.

You can add fresh herbs like basil, mint, oregano, dried herbs, or whatever you like to the dressing.

How To Grill Zucchini And Peppers

This simple grilled summer side dish is so easy to make. Here is what it looks like:

Slice up the zucchini lengthwise and cut the bell peppers in half.

Once you prep the peppers and zucchini, you can move on to making a quick garlic and olive oil dressing to pour over the vegetables after they are done grilling.

I like to slice the zucchini lengthwise so it does not fall through the grill grates.

Once they are done grilling, pour over that delicious fresh Italian dressing while the vegetables are still warm and they will drink up the flavor.

Storing, Leftovers And Reheating

I like to store leftovers in a container in the fridge for up to one week. They reheat well by placing them in sealed aluminum foil in a preheated 350-degree oven until warm, about 10 minutes.

I love to add them to some pasta or to a salad 🙂

Ingredients
  

  • 2 Medium Red Bell Peppers Cleaned and slice in half for grilling.
  • 2 Small Zucchini Cleaned and sliced lengthwise for grilling.
  • 3 tablespoon Olive oil plus more for brushing on the vegetables

Italian Dressing

  • 1 Lemon juiced
  • 3 cloves Garlic finely chopped
  • 2 tablespoon Olive oil
  • ¼ teaspoon kosher salt plus more to taste

Instructions
 

  • Preheat a grill to medium heat.
  • In a small bowl, add the olive oil, garlic, salt, lemon, and mix well.
    1 Lemon, 3 cloves Garlic, 2 tablespoon Olive oil, ¼ teaspoon kosher salt
  • Brush red peppers and zucchini with olive oil and grill for about 5 minutes per side or until lightly charred but still a little firm.
    2 Medium Red Bell Peppers, 2 Small Zucchini, 3 tablespoon Olive oil
  • Remove from the grill.
  • Add the dressing and toss well.
  • Serve immediately.
