Authentic Italian Bruschetta Recipe

Bruschetta Italiana is the perfect Italian bruschetta you can make at home and it is so full of flavor. Fresh tomatoes, olive oil, and garlic come together on crispy slices of bread for a delicious and easy appetizer.

Italian bruschetta is nothing more than a style of using up stale bread (old bread). Italians toast the bread and add their favorite toppings depending on what is in season and there are countless variations of bruschetta all throughout Italy.

This tomato version of bruschetta is a classic way to make bruschetta and the version I enjoy when I visit Tuscany in the Summer. This is what most people think of when they think of authentic Italian bruschetta.

This tomato bruschetta is best when tomatoes are in season (my favorite way to enjoy it when I am home or in Italy) but you can adjust the toppings to make this delicious Italian toasted bread any time of year as I do with my white bean bruschetta.

Now let me show you how easy it is to make!

What you will need

  • Fresh tomatoes: Fresh tomatoes are key when making this bruschetta Italiana. I prefer a meaty tomato, like vine-ripe tomatoes for this recipe. You can also use Roma tomatoes, heirloom tomatoes, or any tomato variety that is fresh.
  • Good quality baguette or ciabatta bread: If you have made my Italian grilled cheese sticks, you know that good quality bread that stands up to toasting. You can read my best bread for bruschetta if you want more ideas!
  • Garlic: No powdered garlic here. Only fresh.
  • Extra virgin olive oil: You want the best quality you can find because you will taste every bit of it.
  • Kosher salt: This is for seasoning the tomatoes.
  • Fresh basil: This is optional. You can add it if you like.
  • Balsamic: This is also optional but one of my favorite additions. It is lightly drizzled on after assembling the bruschetta.

You do not need much to make this delicious bruschetta. It is all about what you like and what is available so feel free to add or take away based on your preference.

How to make Italian Bruschetta

Making this delicious classic Italian staple is so simple. Here are the starting points but remember to make this your own!

  • Toast the bread: Add olive oil to the bread then toast them up. Like with my peach bruschetta, I like to use my oven broiler to make my bruschetta. You can also toast the bread on a pan on the stovetop or the grill.
  • Prepare bruschetta topping: Here is when you add your finely chopped tomatoes, garlic, olive oil, salt, and fresh basil if you are using it.
  • Assemble the bruschetta: Once the bread is done toasting up until golden brown, grab a heaping spoonful of the tomato topping and pour that on top of the bread slices.
  • Serve: I like to serve my Italian bruschetta with balsamic vinegar on the side for my family to drizzle over the top. It is so good this way.

Top Tip

  • Use the best quality olive oil like extra virgin olive oil.
  • Find the freshest tomatoes you can for the best flavor.
  • Make a bunch because they will go fast.
  • Assemble the bruschetta right before you are ready to eat it so the toasted bread does not get mushy.
  • If you prefer less sauce for your topping, squeeze out any excess tomato juice from the tomatoes before dicing them.

Variations

Remember that bruschetta is easy to customize. Here are some of our favorite ways to change it up:

  • Add prosciutto for a salty bite.
  • Add some fresh mozzarella or ricotta for a heartier meal.
  • Add anchovies or capers for a briny flavor to go with the tomatoes.

Storage

If you have leftover bruschetta, you can store the bread separately from the topping. To warm the bread, I like to place it in a pre-heated 350-degree for a couple of minutes to crisp it back up.

Store the toppings in an airtight container in the fridge.

Ingredients
  

  • 1 baguette
  • 2 tablespoon olive oil

Tomato topping

  • 3 medium ripe tomatoes finely diced
  • 2 cloves Fresh garlic finely minced.
  • 3 tablespoon Extra virgin olive oil
  • ½ teaspoon kosher salt

Instructions
 

  • Preheat the broiler in your oven on high.
  • Slice the baguette at a slight angle into 1-inch slices.

  • Drizzle or brush on olive oil onto the top of the bread (only on one side).
    2 tablespoon olive oil
  • Place under the broiler for 1-2 minutes until it starts to brown (watch it carefully).
  • Flip and toast the second side for 1-2 minutes.
  • Remove from the oven and set aside.
  • Make the bruschetta topping then add it to a medium bowl and mix well.
    3 medium ripe tomatoes, 2 cloves Fresh garlic, 3 tablespoon Extra virgin olive oil, ½ teaspoon kosher salt

Assemble

  • Take a heaping tablespoon of the tomato topping and place on top of the bread.
  • Do this until all the bruschetta has been made.
  • Serve immediately.
