chickpeas
rinse and drained. I use 2 cans of chickpeas.

tomatoes
large diced
½
cup
Red onion
finely diced
¼
cup
Italian parsley
Finely chopped
⅛

Extra virgin olive oil.

Kosher salt
plus more to taste
Instructions
Add all of the ingredients to a large bowl.
30 ounces chickpeas,
1 cup tomatoes,
½ cup Red onion,
¼ cup Italian parsley,
⅛ cup Extra virgin olive oil.,
1 teaspoon Kosher salt
Toss well.
Let sit for 15-30 minutes to allow the flavors to come together.
Serve immediately or refrigerate for up to one week.
