When the weather starts to cool, enjoy the rich, comforting flavors of Brasato al Barolo. A classic Italian dish made from an inexpensive cut of beef that is slow-braised in a robust Barolo wine until tender.
Once the wine has come to a boil, reduce the heat to low or medium low so it is at a simmer and then cover the pot.
Cook covered for about 2 hours making sure to flip the meat after one hour.
Remove the meat to a plate and cover with aluminum foil.
Transfer all the liquid and vegetables in the pot to a blender and blend until smooth.
Slice the meat against the grain into about ½ inch thick slices (or as thin as you can) and add it to a serving platter or large plate and pour the sauce over the slices.
