One of the best ways to enjoy large jumbo shrimp is on the grill and then topping it with a delicious Salmoriglio Sauce made from garlic, lemon juice and olive oil. This Sicilian grilled shrimp has all the vibrant flavors of the Mediterranean and the dish is so simple and effortless. Perfect in summer outdoors on the grill or in winter using a grill pan.

Instructions
Preparing the Shrimp
Add the shrimp to a large bowl along with olive oil and salt and with your hands, toss them well so the shrimp are coated evenly. Make sure to wash your hands well afterwards!
12 Jumbo shrimp, ¼ cup Olive oil, ¼ tsp Coarse sea salt
Lay each shrimp on its side and push the skewer through the belly and out the top making sure to slide the shrimp down the skewer making room for more shrimp. Leave a pinch of space between the shrimp.
Salmoriglio Sauce
Mince the garlic and parsley, then add them to a medium bowl with salt, lemon juice and olive oil and mix well. Set aside.
2 tbsp Fresh garlic, 6 tbsp Lemon juice, ¼ cup Italian flat leaf parsley, 3 tbsp Olive oil, ½ tsp Coarse sea salt
Grilling The Shrimp
Preheat the grill or grill pan to medium high heat.
Lay the shrimp flat on the grill (lid closed) or grill pan and cook for 3 minutes per side until they are cooked all the way though and fully the meat is fully white.
Remove the shrimp skewers on to a large plate and pour ½ of the Salmoriglio Sauce evenly over them while they are hot. Serve the remaining sauce on the side.
