28ouncesCanned plum tomatoesDatterino or San Marzano
8ouncesCanned cherry tomatoesor diced tomatoes
¼cupYellow onionfinely diced
1tablespoonFresh garlicminced
1tablespoonOlive oil
1teaspoonKosher saltplus more to taste
1teaspoonfreshly ground black pepper
Instructions
Bring a large pot of water to a boil.
In a large saute pan, add olive oil and brown the sausage very well. You want that sausage to get a bit crispy and leave some browning behind in the pan.

Now add the fresh garlic to the Italian sausage and cook down for a few minutes.

Push the sausage to one the side of the pan and add the red peppers and onion.
