broccolini
rinsed and coarse chopped

Orecchiette pasta
ziti or penne

Italian sausage links
sweet, mild or hot.
½

Onion
thin sliced

Garlic

Parmesan cheese
grated

teaspoon
red pepper flakes

cup
Olive oil

cup
Pasta water

teaspoon
kosher salt and pepper
or to taste
Instructions
Bring a large pot of water on the stove to boil for the pasta.
Pour olive oil into a saute pan over medium heat and add the red pepper flakes.

Remove the casings from the sausages then add sausage to the pan and brown, making sure to break up the sausage.

Push sausage to one side of the pan then add the onions and saute for 5 minutes or until lightly browned.

Add your garlic and cook another 1 minutes

Once onions are cooked through and translucent, add the broccolini and cook until tender about 8-10 minutes.
2 bunches broccolini
Season with salt and pepper.

Reduce heat to low.
Cook the pasta until al dente according to the manufacturer's instructions.
1 lb Orecchiette pasta
When pasta is done reserve 1 cup of pasta water and then strain
½ cup Pasta water
Add pasta to the saute pan and mix pasta in with the broccolini mixture until combined adding reserved pasta water if it looks to dry.
Plate your pasta and finish with a generous sprinkling of fresh parmesan cheese.
