If there is one thing that Italians know how to do well, it is making use of all the seasonal produce when the produce is at its peak freshness. That is exactly where the inspiration for this simple syrup comes from.

Combining blackberries, sugar, water and a little fresh lemon yields the most amazing blackberry simple syrup and lets us use up the fresh in season blackberries. The sweet and tangy flavor of blackberries makes this syrup perfect for adding to cocktails, lemonades, iced teas, and even to top pancakes or ice cream.

We love making use of fresh in season blackberries to make this fruity syrup but you can also use frozen blackberries if that is what you have on hand.

    •  1 cup fresh or frozen blackberries
